Hearty Lentil Soup

Ingredients:

  • 1 cup dried green lentils
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 8 cups vegetable broth
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions:

  1. Rinse lentils and set aside.
  2. Sauté onion, carrots, and celery in a large pot until softened.
  3. Add garlic and thyme, cook for 1 minute.
  4. Stir in lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 30 minutes, or until lentils are tender.
  5. Season with salt and pepper to taste.

Quick Chickpea Curry

Ingredients:

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 tsp curry powder
  • 1/2 tsp turmeric
  • 1/4 tsp cumin
  • 1 can (15 oz) chickpeas, drained and rinsed

  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)

Instructions:

  1. Heat olive oil in a pan. Sauté onion until softened.
  2. Add garlic and ginger, cook for 1 minute.
  3. Stir in curry powder, turmeric, and cumin. Cook for 30 seconds.
  4. Add chickpeas, diced tomatoes, and coconut milk. Bring to a simmer and cook for 15 minutes.
  5. Season with salt and pepper. Garnish with cilantro.
