Hearty Lentil Soup
Ingredients:
- 1 cup dried green lentils
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 8 cups vegetable broth
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions:
- Rinse lentils and set aside.
- Sauté onion, carrots, and celery in a large pot until softened.
- Add garlic and thyme, cook for 1 minute.
- Stir in lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 30 minutes, or until lentils are tender.
- Season with salt and pepper to taste.
Quick Chickpea Curry
Ingredients:
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 tsp curry powder
- 1/2 tsp turmeric
- 1/4 tsp cumin
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 can (14.5 oz) diced tomatoes
- 1/2 cup coconut milk
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish)
Instructions:
- Heat olive oil in a pan. Sauté onion until softened.
- Add garlic and ginger, cook for 1 minute.
- Stir in curry powder, turmeric, and cumin. Cook for 30 seconds.
- Add chickpeas, diced tomatoes, and coconut milk. Bring to a simmer and cook for 15 minutes.
- Season with salt and pepper. Garnish with cilantro.
